I know it can be done since I've seen textures with it done (such as Lolo). My question is how? Kirby's skin texture appears to just be one block and nothing more. I'm new at texture making (this is my first one) so I thought I'd start with someone kind of simple like Kirby and I'd like to give Kirby white hands on a red body. Any help would be appreciated!

Not a problem. Your original hunch was incorrect; matter of fact, that block of skin IS the Kirby hand file (they wrap around on the actual texture, like everything else, hence why it can still be square). Kirby's actual body texture... is actually WITH his eye textures. Try to stay away from the borders of the texture, and you're fine (the pixels stretch so to cover his entire body). Simply color the "SKIN" file white, color the eye skin files red (disregarding/changing the eyes accordingly), mess with his shoes if you like, and voila.
