Ok, so I have my brawl ISO. (It also came with an SFV file, what's that for 0_o?)
Well since I'm ready to start using wiiscrubber 2.1 on my ISO here's what I did:
I double click Wiiscrubber, a notice comes up saying "Unable to open key.bin", (is this a problem?), so I click ok on the notice and wiiscrubber opens up.
Now there's 3 options up top. Save options, Scrub Type and Keep Headers. I'm not sure if I should touch those so I don't. Then there's "Load ISO", "Clear and Save ISO", and "Unscrub Image". The only one of these I can click is "Unscrub Image". So I click that. Then I open my ISO and I think I'm good, but then it tells me to choose the DIF file! I don't even know what that is?
Help?

First off. SFV, I think, is a checksum file. Google for a way to use it. (To make sure your file is without errors upon download completion --- you may just be able to skip this step) Wiiscrubber 1.21 is what you want. Check the FAQ above for a link. Key.bin is basically a password used for wii files. I can't really tell you where to obtain it but... I'll just say google. Your last question doesn't apply if you use the correct version of the program. (The newer ones have more options... but don't work properly for Brawl editing)

I already had WiiScrubber1.21. I just downloaded the key.bin and put it in the wiiscrubber folder. Opened wiiscrubber, it started with no error and I was even able to click "Load ISO". I did and I can see all the different partitions! It works now, I'll continue tomorrow! Thanks for all the help picano, I love this site lol! I'll post again if I have more trouble, see ya!
EDIT:
Ok more help XD! Actually, just reassurance. So I opened up the data partition, went to fighters, went to pit. Now I see all his costumes, the pac and the pcs. I went to FitPit02. How do I replace a costume? This is what I did, I right clicked, clicked "load" and found the costume I wanted to replace it with. It said it did it, but when I checked, it still said FitPit02. Does it rename it to this no matter what? Did I do this right?
Finally, after I make my changes and want to close wii scrubber and make more changes later, how do I save??

u're right, when u load (replace) a file, the name of your file change to the default name automatically, son don't worry about it, just be sure u're replacing .pcs files by .pcs files and .pac by .pac as well... U don't need to save in WiiScrubber because when u load (replace) a file, after that Wiiscrubber reparse all the iso (is like saving), so when u finish, just close the program, and click yes (when wiiscrubber ask u if u really want to exit). Thats it!

As a side note, I'd recommend jotting down a list of what characters you put on what, so to save you the trouble of "OK, all my Bowser costumes are filled... and I've got a new one I really want to have now! But who do I replace? And where did I put the one I want to replace again?! Red, blue, green, blargh" Trust me. It's what I do; simple Notepad, have the PAC List available... * cough*... and you're set.

As a side note, I'd recommend jotting down a list of what characters you put on what, so to save you the trouble of "OK, all my Bowser costumes are filled... and I've got a new one I really want to have now! But who do I replace? And where did I put the one I want to replace again?! Red, blue, green, blargh" Trust me. It's what I do; simple Notepad, have the PAC List available... * cough*... and you're set. What I do is use the Megagraph.xls that came with the SE guide, and added an extra column for the replacement. The benefits of this are, you get a little picture of the costume, plus it tells you which PAC is which, AND it tells you which CSP is which (Both small and large! - so you don't have to extract the hundreds of files with wiiscrubber) On the negative side, it takes a bit longer to load up than notepad...
