Ok so today i was playin brawl wih a guy online...and he chose kirby. Now he chose kirbys pink outfit, but i replaced that with the awesome smiley kirby texture...how was he still pink?

Custom textures do NOT work online, UNLESS the person you are playing online with has the same texture in the SAME place as you. As in, quite literally, the person you are fighting would need a copy of your customized Brawl texhax disc in order to see your textures online.
That, and I think you'd also need the .pac file on Kirby as well. Nothing wrong with just his .pcs, though (unless it's someone like Bowser or another transforming character, where it would be required to keep the texhax up and running).

No...just the pcs...is that bad? Yes, bad. Because Kirby will still show as pink in online mode and others like Multiman. PCS are loaded in Melee mode while in the character screen. PACs are loaded in any other moment (transformations like Bowser or Wario, Zelda/Sheik, PT...).

Which is kinda why just releasing the .pcs' is not really enough... I mean, you can decompress them anyway, so it isn't much protection against thievery...
